my favorite greek recipe...



SPANAKOPITA
ingredients

-2 large onions chopped
(you can use a bunch of green onions/scallions instead)
-2 packages frozen spinach (thawed and drained)
OR 2 pounds fresh spinach rinsed and chopped
-8-10 ounces of crumbled feta cheese
-4 large eggs
-4-6 ounces of ricotta
-2 tablespoons of all purpose flour
-olive oil
(appox 1/2 a cup for stovetop spinach mix and as much as needed to coat filo dough)
-ground pepper/salt to taste
-1 package of filo dough, thawed

No mention of the Parmesan here. Is that because it's optional? Or because you forgot it? Because as it stands, this recipe does not contain enough cheese.

You are correct. No mention here since it's not really a "Greek" part of the recipe and optional. I use appox 4-6 oz, in the mix and then sprinkle shaved parmesan on the very top filo dough layer after the last of the olive oil has been applied.

Also, always feel free to add more cheese. I always do.
