P.S: Can I give a shout out to Beth? I'm looking for a tasty lemon cookie recipe as have tried two and they were absolutely horrid. Any assistant from you or her would be greatly, greatly appreciate.

Hey there, Brenda. What kind of lemon cookie would you like? (Aside from one that's not horrid?)

Or do you want something a little snappier?

Whatever recipe you use, skip lemon extract (especially if it's imitation). Lemon zest and/or lemon juice will give you the best lemon flavor in all lemon cases. Try to find organic lemons if you can.

Let me know if I can offer further advice. And if the recipes you tried were online, kindly share the links so I can see what's wrong with 'em.

Hi Beth, THANK YOU so much for your quick reply. I think you have 'hit the nail on the head' when you say "skip lemon extract" as both recipes did call for it which I used (though would never dream of using it in a lemon filling). Unfortunately, I do not have the source for the first recipe (too much flour in my opinion and tasteless) however the second one can be found at www.tasteofhome.com/Recipes/Lemon-Drop-Cookies-2. It was VERY sweet and was more like a meringue in texture.
Though the recipe you recommend sounds delicious, what I am looking for is one that screams LEMON! In order preferably either a drop, refrigerated, rolled cookie or last resort a Spritz. Something easy to prepare ... as

I have a terminally ill sister who has been in hospital since early December and every week I make a homemade treat for her and a few other patients plus a batch up for the nursing staff. (ie: Last month the theme was the use of fresh Berries. Assorted Tarts, Muffins, Dipped, Filled ...) This month its c-o-o-k-i-e-s but have no intentions of working my way thru the alphabet. :) I've made 'almond' and 'orange' ones already which were a big hit.

There is another 'Lemon Drop Cookie' recipe from Cooks.com -
igredients as follows:
2 c Sifted Flour
l/4 tsp Baking Soda 1 cup Sugar
l/2 cup Shortening 1 Egg
l l/2 tsp. grated lemon peel
2 tbsp. lemon juice 1 tsp. water
which I am considering trying and wud appreciate you expertise on. Perhaps even add a lemon icing? Nay or Yay? -Brenda-

Brenda: I'm sorry about your sister, but how lovely of you to bake for her and other patients and staff. Baked good are love you can eat.

Lemon cookies are tricky, as you've discovered, but the recipe you found from Cooks seems worth a whirl. Though I'm not understanding why it calls for 1 t. of water. But perhaps it makes sense in context.

The zest and the juice should give you a nice lemony oomph. And if you'd like up up the lemon ante even more, you could glaze them: just add lemon juice to powdered sugar and stir until it's smooth and a nice consistency.
